AIHM organises Culinary Economics Workshop

Chandigarh, Jan. 16, 2025:-Dr. Ambedkar Institute of Hotel Management Catering and Nutrition, Chandigarh has organised a Culinary Economics Workshop under the guidance of Chef Y.B. Mathur, Former Senior Executive Chef, ITC from 13 January 2025 – 21 January 2025. He is known for his exceptional expertise and literary contributions to the culinary world.
Chef Y B Mathur demonstrated a selection of specially curated recipes, blending traditional flavours with innovative techniques. Highlights of his demonstration included Turkey Thecha Fry, Marathi delight, Turkey Danedar Degh Korma, Dak Bungalow Duck, Hyderabadi Duck Dum, Turkey Cafreal, Turkey Chettinad, Kolhapuri Duck Masala. 
Adding prestige to the event, executive chefs from esteemed establishments, including Taj Chandigarh, Holiday Inn, and The Lalit, participated actively, sharing insights and engaging with students and faculty. 
Vishal Kalia, Principal of CIHM also joined the workshop, emphasizing the institute's commitment to fostering excellence in culinary education. 'This workshop highlights the authenticity of regional flavours while showcasing the versatility of premium ingredients. He is confident it will enrich participants' skills and leave a mark on the culinary world' said Mr. Arvind Varma, Principal of the Institute.
Chef Y.B. Mathur, celebrated author of 'Celebrating the US Ducks and Turkey' and Culinary Economics', shared valuable insights into authentic cooking practices. The 
workshop provided a unique platform for participants to learn from a master while exploring 
the intersection of gastronomy and economics, further enhancing AIHM Chandigarh's reputation for culinary excellence.
